People usually spend Valentine's Day with their one special person, but Jeffrey and I like to extend the love and include friends, as well. Since Valentine's Day is midweek this year, I'm making a simple dinner where things can be either prepped or made ahead so I'm not pressed for time on Wednesday night.

What's on the Menu:
Fig & Goat Cheese Toasts - Assemble an hour ahead.
Cosmopolitans- Make the drinks early in the day and refrigerate. Shake with ice before serving.
Slow-Roasted Filet of Beef with Basil Parmesan Mayonnaise - Prep the beef up to a day in advance and refrigerate. Prep the Mayo up to a week in advance.
Oven-Roasted Vegetables - Prep the vegetables early in the day and roast before dinner.
Vanilla Rum Panna Cotta with Salted Caramel - Prepare up to 4 days ahead and refrigerate. Add warm store-bought caramel before serving.
