After all these years, Friday night at our house still means roast chicken!! I think I’m going to make my Roast Chicken with Bread and Arugula this weekend. It's the perfect Spring variation on my classic roast chicken. The chicken actually roasts on top of thick slices of bread to catch the drippings and they become the most delicious croutons in the arugula salad. Is it Friday yet?!
